  • 8 eggs
  • 1 tomato
  • 1 green paprika
  • 1 carrot
  • 1 small onion
  • 1 garlic clove
  • 7 oz / 200g chicken breast stripes

Poach the chicken (15mins), and the carrots (5mins) till cooked. In the meanwhile, dice the tomato, paprika, onion and garlic. Throw everything in a bowl with the scrambled eggs and mix. Pour the mixture in a baking form. Bake 25-30mins in a preheated oven at 350F or 175C.

Tip: I like seasoning it with fresh oregano. You can play with the ingredients a lot. You can swap the chicken with tofu, feta, salmon etc. Also you can use pretty much any vegetables you like.
